Pancakes are a lovely treat for breakfast at the weekend or for pancake day. These American style pancakes and thick and fluffy. Eat them plain, drizzle over some maple syrup or add some blueberries to the mix.
This recipe will make enough to serve 3-4 people.
Time: 15 minutes
135g plain flour
1 tsp baking powder
1/2 tsp salt
2 tbsp. caster sugar
1 large egg
2 tbsp. olive oil
A little oil and butter for frying
Sift the dry ingredients together in a large bowl.
In a separate bowl, beat the egg and mix in with the milk and oil.
Combine the wet and dry ingredients and whisk until smooth.
Heat some butter and a little oil in a frying pan.
Ladle in some pancake mix, you can do a few at a time depending on the size of the pancakes you're making and the size of your pan but they shouldn't touch.
Cook until you see bubbles forming and then flip over for a couple of minutes on the other side.
