Bedazzled Rocky Road

Bedazzled Rocky Road


This is a great recipe to make with children. Once the chocolate has been melted they can take part in all the other stages. It involves bashing, mixing, tipping and sprinkling, what more could a child ask for?

My 2.7 year old son really enjoyed making this and loved licking the spoon even more.

Time: 20 minutes plus 2-3 hours chilling in the fridge

Ingredients
150g milk cooking chocolate
50g plain cooking chocolate
125g unsalted butter
3 tablespoons maple syrup (or you could use golden syrup)
230g digestive biscuits
40g mini marshmallows
50g dried cranberries
Sprinkle of shimmer sugar and shimmer pearls from Dr Oetker (or other fun sprinkles)

Method
Melt the chocolate, butter and maple syrup over a low heat in a saucepan (older children could help stir as it melts)

Just use a little heat to allow everything to melt


Put the digestives in a sealed bag and wack hard with a rolling pin. You are aiming to have some small pieces and some really crushed up. My son really loved doing this.

Breaking up the biscuits is lots of fun


Tip the crushed biscuits into the chocolate and mix until completely coated.

Add in the marshmallows and dried cranberries and mix until everything is covered in chocolate.

Line a baking tin with greaseproof paper.

The greaseproof paper should come up the sides, higher than the rocky road so you can lift it out once chilled


Tip the chocolate contents into the baking tin and smooth out and well into the corners with a spoon.
While the chocolate is still melted, sprinkle on shimmer pearls, shimmer sugar or whatever you have to decorate.

Decoration is optional but part of the fun


Place in the fridge and allow to chill for 2 to 3 hours.
Remove from the fridge, lift out by the baking paper and slice the rocky road into pieces.

These make a lovely treat or present and would also look great at a birthday party with the bedazzled look.
