Speedy cupcakes

Speedy cupcakes for busy mums, children with short attention spans and beginner bakers. The all in one method that just needs an electric hand whisk and no more long creaming and beating by hand!

Time: 10 minutes prep and 20-25 minutes cooking
Age: Any Age
Level: Easy

Materials
Electric hand whisk
Bowl
Tea spoon
Fairy cake tin
Cake cases
Cooling track

To make 24 cakes
225g Soft margarine or softened butter
225g Caster sugar
225g Self-raising flour
4 eggs
1 tsp baking powder
(To make 12 cakes the mixture is easily halved)

To decorate;
The cheats speedy way
Dr Oetker - Easy swirl cupcake icing
or
Buttercream
115g softened butter
115g icing sugar
Cup of Vanilla extract
Use decorations of choice

Method
Put the softened butter, caster sugar, self-raising flour, baking powder and eggs in a bowl

Mix all together using an electric hand whisk until smooth

Put cake cases in fairy cake tin

Spoon 2 generous teaspoons of mixture in to each cake case

Put in to a preheated oven of gas mark 4/ 180'C for 20-25 minutes or until golden

Put on a cooling track
When cool enjoy decorating
