Easy Rainbow Cake

Colour has the power to make you happy. What can be more colourful than a rainbow? Your kids will be delighted to mix the colours to build their very own rainbow cake.

The focus of this cake is fun- not perfection so there is no stress in baking 7 different layers like some rainbow cake recipes. Let the little ones grab their apron and spoons and get creative.

Time: 1 hour preparation and cooking time
Age: Any Age
Level: Medium

For Cake:
1 package of vanilla or butter cake mix
Food colouring- red, yellow and blue

For Icing:
60g cream cheese (softened)
1/2 tsp vanilla essence
3/4 cup icing sugar mixture
Coloured sprinkles

  • Mix the cake batter according to the packet directions.

  • Divide the batter into 6 bowls with even portions.

  • Add a few drops of food colouring to each bowl to mix the following colours: Red, Orange (red & yellow), Yellow, Green (yellow & blue), Blue, Purple (red & blue)

    Mix well to ensure the colour is nice and even.


    Tip: add colour a few drops at a time. Colours will darken slightly in the cooking process. If you are concerned about food colour additives, use a natural food colouring brand (available at most supermarkets).

  • Grease your cake tin. I used a standard loaf tin to acheive stronger definition between the colour layers. Alternatively you can use a round cake tin but will have thinner coloured layers. You can also use muffin tins for rainbow cupcakes.

  • Starting with the red batter, gently poor the batter into the cake tin.

    Layer each colour by gently and slowly pouring the batter with the bulk of the batter concentrated on the center of the cake.


    The batter will flatten as you pour.

  • Bake the cake according to the packet timing. Once the cake is fully cooked, remove from oven and allow to cool completely.

  • Add the cream cheese and vanilla essence to a large mixing bowl. Using an electric mixer, beat until pale. Slowly add the icing mixture until fully combined.

  • Spread icing on the cake and sprinkle with coloured sprinkles.

  • Clean up! You can make the clean up fun too by playing the "washing up game". Kids love bubbles almost as much as they love rainbows.
