Disney's Frozen Christmas Snowflake Cookies

Throw a Disney Frozen Themed Christmas Party with these beautiful snowflake cookies!

It's Disney's Frozen time ~ Let's Eat, Let's Eat ~The sweet never bothered me anyway! ~

Disney's Frozen seems to be extremely popular right now and Christmas is all about snow and winter. Well, except in Australia, but that is not stopping me to create some icy-themed cookies to excite the little girls during the festive season.

I think these snowflake cookies are pretty and sweet enough for Queen Elsa herself.

Time: 60 minutes
Age: Any Age
Level: Medium

125g butter at room temperature
100g brown sugar
125ml golden syrup
1 eggwhite, lightly whisked
2.5 cups plain flour
1 teaspoon grounded ginger
1 teaspoon mixed spices
1 teaspoon bicarb soda
150g pure icing sugar
8 -10 drops food colouring in blue, purple and pink
Cake deco chocolate beads
Assorted small Smarties

Preheat oven to 180C. Leave butter in room temperature until soften.

Use KitchenAid to whip the butter, brown sugar and golden syrup in a bowl until creamy.

Stir in the flour, ginger, mixed spices and bicarb soda and mix well to combine.

On a lightly floured surface knead the dough until smooth.
Cover in clingwrap and let the dough rest in the fridge for 30 minutes.
Roll out the dough to 3mm thick. Use star pastry cutters to cut out shapes from dough.

Note: I've tried many different snowflake cookie cutters, but they were too delicate and break off too easily. You don't really want to see these snowflake cookies break down when your little guests pick them up. (That just means more cleaning and washing for the party host)

So I use the traditional star cookie cutter which is more sturdy. The result is fail-proof and looks equally stunning.

Bake in preheated oven for 8 minutes or until lightly golden.
Remove from the oven and set aside on the trays to cool.

To make the frosty icing - sift the icing sugar into a small bowl.
Use Kitchen Aid, gradually add egg white and beat until it forms a firm paste.

Add food colourings to 3 separate bowls. Stir until combined.

Place the icing in 4 separate (3 coloured and 1 white) piping bags fitted with a 1mm nozzle.
Pipe the icing onto the snowflakes cookies and decorate as shown.

Finish with edible cake deco beads, smarties and glitters.
Store in an airtight container for up to 2 weeks.
