Super Easy Banana Bread

Christmas is just around the corner and making gingerbread cookies is a fun cooking activity you can enjoy with kids of all ages.



Make a simple dough, roll it out and then let all creativity go loose. Turn the traditional gingerbread man up-side-down and you will get a reindeer instead. We think this is pretty clever, fun and tasty.

Level: Medium



Materials
  • 250g butter
  • 200g brown sugar
  • 250ml golden syrup
  • 2 eggs
  • 750g plain flour
  • 2 tablespoon ground ginger
  • 2 teaspoon mixed spice
  • 2 teaspoon bicarb soda
  • 300g pure icing sugar
  • 2 drops blue liquid food colouring
  • 50 red chocolate smarties

  • Method
  • Preheat the oven to 180C.
  • Separate the egg whites and the egg yolks.



  • Use an electric beater to beat the butter and brown sugar.
  • Add egg yolk and golden syrup and beat until combined.
  • Follow by stir in the flour, ginger, mixed spice and bicarb soda.



  • Add flour, ginger, mixed spice and bicarb soda and combine.
  • Knead the dough until smooth..
  • Cover with clingwrap and let it rest in the fridge for 30 minutes.



  • In the meantime, beat 2 egg whites until they are soft peaks.
  • Slowly add the icing sugar and beat until stiff peaks form.



  • Divide the icing among 2 bowls (or depending how many colours you'd like to use).
  • Add blue colouring and stir until combined. Place in the fridge.
  • Place the gingerbread dough between 2 sheets of baking paper.



  • Use a rolling pin, roll out the dough until 4mm thick.
  • Use a gingerbread man cookie cutter to cut out the shape.
  • Bake in the oven for 8-10 minutes.
  • Transfer the cookies to a cooling rack to cool.
  • Place the icing into a piping bag and get ready for some fun!



  • Turn the gingerbread man up-side-down.
  • Pipe white icing over the biscuit to decorate as shown.
  • Dot the blue icing to indicate the eyes.
  • Add red smarties on the nose to finish it off.



  • There you have it - Rudolph the Red-Nosed Reindeer gingerbread biscuit.

    These are a lot of fun to make and they will definitely bring smiles to all when you finished.



    Most importantly, they are totally endearing to give away as Kris Kringle presents!
